Kidney Beans & Red Pepper Risotto


Risottos are one of my most favourite things to make especially if  I am feeling too lazy to cook. They go well with almost anything and are just so easy and fun to make. I go crazy experimenting with flavours, mixing up various ingredients, trying out new recipes, and it never ever ever gets old!

Here's one that I have made after kind of being inspired by a caribbean restaurant I so thoroughly enjoy going to in my city! It has the goodness of red kidney beans, the wholeness of rice, the zang of whole spices, the divine flavour of sweet peppers, and the zest of fresh tomatoes!


So, without further ado, here's what you'd need:


Ingredients:

 1. 1 cup rice
2. 1 can of kidney beans
3. 1 cup halved cherry tomatoes
4. 1 Onion, finely chopped
5. 1 large Red pepper, chopped
6. Salt to pinch
7. 1 tablespoon whole spices
8. 1 tablespoon mixed spice powder
9. 2 cups water


Procedure:



1. Heat a pot and add a dash of olive oil. Once the oil heats, add whole mixed spices such as coriander seeds, cloves, black pepper, cardamoms, bay leaf. Fry for a minute till well done.

2. Add chopped onions and fry till golden brown.

3. Next, add the red peppers and tomatoes and cook till the tomatoes are mushy, and peppers, tender.

4. Then add the red kidney beans with the brine. Cover and simmer for 10 minutes in medium to low heat.

5. Add some mixed spices (ground) and cook for 5 minutes more, while stirring the whole dish.

6. Finally, add the rice and water. Give it a stir, cover and cook for 10 more minutes and medium heat.

7. Serve hot with salad or meat or whatever you fancy.
