Mediterranean Warm Salad


I love salads, mostly prefer eating them as sides rather than mains. All except this amazing dish that I came across a few weeks ago in my uni cafe. It was served as a warm salad. However, when the waitress gave it to me it looked more like sauteed vegetables, but I must say it is one of the best salads out there becasue it is soft, warm, delicious and actuall filling. Sends me to a mediterranean dream...

Ingredients:

1. 1 large red onion
2. 1 small aubergine
3. 1 courgette
4. 1 pepper 
5. 2 spring onions
6. Olives
7. Olive oil
8. Balsamic vinegar
9. Herbs
10. Salt
11. 1 bunch of cherry tomatoes

Prodecure:

Step 1: First, half and slice up ALL the vegetables except the cherry tomatoes. Toss them together to mix them in a bowl.


Step 2: Heat a frying pan and add a bit of olive oil. Once the olive oil is hot add the onions, pepper, aubergine, courgette and spring onions. Sprinkle some salt and stir for a bit till they are tender and start to brown slightly.


Step 3: Now, add the tomato bunch and grill in an oven for 7-8 minutes till the top of vegetables turn brown.


Step 4: now transfer it carefully to a plate and sprinkle with some more olive oil, balsamic vinegar, olives and herbs.

Mmmmmmm!!! Now enjoy it warm as a side dish or mains!
