Daisy Salad


"Fresh as a daisy" phrase never felt fresher! I love daisies… They are so cute… during spring all the way till falls, the green fields are carpeted with these little white flowers. I just love them <3 Such beauties, they have been a cause of such grand inspirations such as "Daisies" by Willian-Adolphe Bouguereau (1894):

***Nerd Fact***

Daisies come in many different varieties, the most common, especially in Europe, being Bellis perennis a.k.a English Daisies. They are now abundantly found in America and Australia too. The flower itself is not a single entity but a composite of several yellow inflorescence and white ray florets. These types of flowers are called "Pseudanthium" where clusters of different flowers group together to form one single flower! Much like dandelions, sunflowers, peace lilies, etc.


Its roots are what you call a "rhizome" a.k.a creeping rootstock,  which are like ginger, as in they have sections and nodes, from where more shoots sprout out, and run horizontally under the ground. The leaves and flowers are edible and can be eaten either raw or cooked.

Okay, nerd rant over

Today, I'd love to share with you my recipe for Daisy salad. It is quick, easy and very fresh. So, grab your cooking apron, bring out your favourite salad items and let's get going.

Ingredients:

1. Fresh daisies and daisy leaves
2. Bowl of baby spinach and lettuce (ideally, whatever you like in your salad)
3. 1 teaspoon balsamic vinegar or lemon juice
4. 2 Teaspoons pumpkin seeds (or any one you like)
5. 5 Cherry tomatoes
6. 5-6 olives
7. 1 teaspoon herbs (rosemary and oregano)




Procedure:

1. Wash the daisies and the leaves clean. Toss them in with the salad leaves, olives and tomatoes into a plate. I also threw in a few dandelion leaves as they came along with my daisies while picking.

2. Drizzle with balsamic vinegar, or if you don't prefer the vinegar, fresh lime/lemon juice should do just fine.

3. Sprinkle some herbs and seeds and…

Tadaa!!




Simple, wasn't it? It is so very refreshing and healthy. I could get used to this ;)
