Gluten and sugar free pancakes

HAPPY PANCAKE DAY!!!


Also known as "Shrove Tuesday," and once called a "half-holiday" in Britain, this day was celebrated as a way of obtaining absolution from one's sin by confession. This has been a tradition especially amongst christians in most part of the Europe, UK, as well as the world, traditionally celebrated just a day before the starting of "Lent".
Shrove day dates way back to as early as the 12th century when games like "mob football" were played to celebrate the day, up until the 19th century when it got banned to play the football on public highways (well, that's a good thing no! :p).

So why pancakes?

Well, in olden times, pancakes were a way of getting rid of all the rich food like eggs, sugar, milk, etc. just before the 40 days fasting during Lent to avoid temptations from eating anything beyond plain and simple food that did not include meat, dairy products and eggs. Although not a ritual anymore, people still love the tradition of cooking pancakes on this day till date for meals since, well, why not? 

Pancakes are AWESOME!!!!

So, to celebrate this lovely day, I'm going to share a delicious recipe with you…

This is my gluten free pancake recipe that tastes heavenly and is full of protein, iron and fruity goodness that is super easy to make and really really quick too. It is so soft and yummy with natural sweetness that I have NEVER had the need to add syrup or chocolate sauce….

For this, all you will need:
  • 1 large banana
  • 1 large egg
  • 2-3 spoons full almond powder
  • A dash of olive oil/butter
 

1. Mash the banana, and blend it well with the egg and almond powder using nothing more than a spoon. The batter does not necessarily has to be smooth. I like tiny little banana lumps in mine and they are the source of sweetness in the pancakes so, I like keeping them less consistent. 


2. Then, on a frying pan add your olive oil or, if you like, butter. I personally like it with olive oil because a) it is healthier, and b) butter has salt in it that might not go very well with the sweetness of the banana for a lot of people (myself included)…

3. Add a spoon full of your pancake batter in the oil. Do not add a whole lot like crepes cause the batter does not stick well and it crumble easily. 


4. Flip it once after a minute and that's it, it only takes about 2 minutes to be done. Do the same with the whole batter.

And that's it, enjoy with some honey, sesame seeds/crushed nuts, fresh berries and fruits, and a cup of tea or coffee :) 

Excellent breakfast!!!

Best way to use over-ripped bananas too, that would have otherwise gone in to the bin…



This recipe makes 4 small pancakes. You can double, triple or how many ever-ple the amount and make it for the whole family :)
